Yummy Berry Ice Cream



I had inspiration to go on a bit of a cooking spree the other day. I made a chilli satay with chicken and noodle salad and for desert, berry ice cream.

The chicken satay was delicious but the berry ice cream really was something else. Although it's called ice cream, it's actually made from natural yoghurt which means it's quite good for you and with frozen berries, fresh blueberries, mint and a bit of honey being the only other ingredients, there really are no nasties to make you feel guilty. And I'm pretty sure it contributes to your 5-a-day too.

The best part of it for me is that it literally took 2 minutes to make. Served straight away and it's a refreshing ice cream but left in the fridge it can be eaten as a yoghurt.

BERRY ICE CREAM
Serves 4-6 depending on the glass size

1x500g mixed frozen berries
150g fresh blueberries (although these are only a garnish so feel free to use any fresh berries you want)
3-4 tablespoons runny honey
1x500g tub of natural yoghurt (make sure it's sugar free because the regular version contains a scary amount of sugar)
A few sprigs of fresh mint

Divide the blueberries between the glasses.
Put the honey, yoghurt and mint into a food processor and whiz, then add the frozen berries and whiz again until combined. Spoon the frozen yoghurt over the blueberries and serve. Yum.
